JR's has run American barbecue across the Gold Coast, Byron Bay and the Northern Rivers since 2009, the pitmaster having trained in Texas and worked his way through the regional barbecue belts of the American South. Meat goes low and slow over pecan wood for up to twelve hours in custom-built pits: Texas brisket, Carolina pulled pork, jalapeño cheddar hot links, and whole hog cooked over coals onsite. The operation caters private events and surfaces at pop-ups like its smoked-cheeseburger sessions with The Bread Social.
