Thirty acres of regenerative kitchen garden two kilometres from Birregurra; gardeners pull the harvest each morning for that day's service. Slow-cooked beetroot braised with abalone and whipstick wattle. Pork jowl grilled with smoked eel. Wheat croissants. Country acknowledged to the Gulidjan people.
