Soil scientists and an agricultural economist started this in a farm shed near Aubigny in 2019, brewing on a secondhand 52-litre pilot system. A 2020 Queensland Amateur Brewing Championship win for their Lime and White Pepper Gose pushed it toward commercial scale. They landed in a former Dairy Farmers building from 1900–1905 in Toowoomba — industrial bones, live blues, and the Mouse Proof Bitter as the anchor tap.
