Kristy Lark grew up watching a copper pot still outside her bedroom window at her parents' Lark Distillery — the one that started Australian whisky in 1992. Her own still, built in Hobart with the condenser at the top rather than the side, is an unconventional design that shapes Killara's single malt character.
