Suffolk sheep graze the Bannockburn vineyard in winter, their manure feeding the same soil that grows the Pinot Noir and Chardonnay. Kitchen scraps, grape skins and farm waste cycle through a compost pile that returns to the vines. The bistro runs on estate eggs, vegetables and, seasonally, the sheep themselves. A farm that eats what it grows.
