A farmhouse-style restaurant on a Pialligo truffière, ten minutes from Canberra. James Souter and John Leverink — also of The Boat House and Canteen — run the kitchen, drawing on Beltana's nine-acre truffle orchard in winter and the broader Pialligo grower network year-round. Architecture by Terry Ring and Associates with EMVY Design. Sample dishes: charcoal squid with farm hazelnuts and pangrattato, fried artichoke flowers with celeriac mayonnaise. Owners Alice and Doug O'Mara opened the restaurant in February 2024.
