On the Lyell Highway outside Hayes, Jane and her team farm the ingredients before they brew with them. Barrel ageing, spontaneous fermentation, fruit ales, sour cherries — the approach is genuinely agricultural, not aesthetic. The cellar door farm bar opens Thursday to Sunday; on market Sundays in Hobart, the brewery closes.
