Jo Walker started Alsahwa as a regenerative macadamia farm in the Noosa Hinterland in 2020, then moved the whole project south to 30 acres in Palmwoods in 2024. The Mediterranean-leaning restaurant runs Wednesday to Sunday with Peter Kuruvita as Culinary Director, pulling produce from the estate's own gardens and a network of named local farmers. Honey from the property's own bees, a curated shop running KITX activism tees and Little Wildling teas alongside the estate honey, weddings and long-table dinners under the trees. Part of the Curated Plate festival programme.
