Rodney Dunn and Séverine Demanet opened their cooking school on a Lachlan farm in 2008 before relocating to a former mental asylum in New Norfolk — the pressed-metal-ceilinged Bronte building at Willow Court. The restaurant followed in 2017, the kiosk in 2020, the cooking school in 2022. A kitchen garden metres from the back door drives the menu across all three.
