David Ward and Chris Middleton started Sydney Rum Distillery in 2015 with an eye on export markets. Their Cargo Cult range — built on aged rum from two remote South Pacific island distilleries — includes a zero-sugar dry spiced, a banana-infused full-strength, and a pot still navy strength. Production has since moved to a Muswellbrook facility in the Hunter Valley, with copper pot and column stills.
