Swiss-born Martin Rellstab, a fifth-generation cidermaker whose family name derives from a fruit milling stick, built this Woombye cidery in 2017 to produce Queensland's only Méthode Traditionnelle sparkling cider. The flagship Brut+ takes 18 months before it's ready to bottle. Alongside it: a dry still, a bottle-fermented, and a Cloudy Perry made from a local farmer's surplus pears.
