A former butchery on Elizabeth Street — Mundy's and Sons, decades in meat processing — the name came naturally when the founders first walked in. Ex-science teacher Cornel Ianculovici built this with close friends, no investors, just pooled skills: an architect won an award for the fit-out, all concrete block, black steel and copper-pipe lampshades. The beer follows the same logic: obsessive, DIY, unsponsored.
