Botanicals cut the night before arrive at the Brookvale distillery each morning; the goal is to distil within the hour. Seadrift runs copper pot stills without a drop of alcohol in the output — sea kelp from local waters adds what they call a "beaches" note. The result sits closer to a traditional spirit than most zero-proof alternatives manage.
