Patina Wines

Rod Shields grows Chardonnay and Cabernet Sauvignon on volcanic soils above 600 metres on Mt Canobolas, then holds the wines back — deliberately — to give them time to integrate before release. The Cabernet, built on high acidity and firm tannins, needs it. Tastings are poured at Ferment, the Orange Wine Centre on Hill Street.
