The name comes from a gold-lettered declaration above Woombye's first pub in 1871 — "nil desperandum," or no worries. The rum lives up to it: Queensland molasses, wild-fermented with local water, dunder and muck, double pot-distilled and aged at least two years in ex-bourbon barrels. No sugar, no additives. The distillery door opens daily from 10am, hinterland terrace and all.
