Six generations of fortified winemaking since 1859 gives head distiller Darren Peck an unusual advantage: barrels. Morris finishes its Australian single malt in its own Rutherglen fortified wine casks — tokay among them — imparting something no bought-in cooperage can replicate. The refurbished cellar door pours both alongside locally sourced food. The Tokay Barrel expression retails at $148; two bottles made Halliday's best-under-$100 list.
