Federico Zanellato cooked at La Pergola in Rome, the Ritz in London, Noma in Copenhagen, Ryugin in Tokyo, and Attica in Melbourne before settling in Sydney and running the kitchen at Ormeggio at the Spit. He and his wife Michela Boncagni — sommelier on the floor — opened LuMi on Pyrmont Bay's Wharf 10 in 2014. Italian heart, Japanese mind, in Zanellato's own framing: chawanmushi, spelt ravioli, gunkan with sea urchin and caviar, pork jowl, signatures that change with the seasons. Four courses at lunch, eight at dinner. The room sits under a multitude of pendant lights with glass walls onto the harbour. Best Italian Restaurant in the World 2019 (Gambero Rosso).
