Keira and Bennett run their micro-distillery from the old Oyster Bay Hotel on Stansbury's foreshore, where St Vincent Gulf's "dodge tide" — a rare slack-water phenomenon that stills the bay roughly twice a month — gave the operation its name. The range includes Big Thyme Gin, Yuzu Vodka and a Salted Caramel Liqueur. Spirit tastings and cocktail masterclasses are available at the cellar door.
