South of Launceston at Relbia, Josef Chromy's winery is built around meticulous process: grapes move through peristaltic pumps borrowed from cardiac surgery, a German press extracts juice at low pressure to preserve aromatics, and Pinot Noir ferments in small open-top batches using a pneumatic plunger co-developed by Josef himself. The minimalist building is worth visiting for the cellar door and sharing plates alone.
