Founder Simon Walkenhorst was performing classical piano before he started brewing in 2004. That background shows — Hargreaves Hill built its reputation on precision with traditional styles rather than novelty chasing. The Lilydale taproom on Beresford Road, open Wednesday through Sunday, pours the core range alongside a steady rotation of seasonals. The brewery survived being burnt down in the Black Saturday fires and has kept going independently since.
