Gin School

At 109 Edward Street, participants choose from 180 botanicals — including 40 Australian natives — to distil their own gin on copper stills, or blend a spiced rum from 36 spices and tinctures in the CBD spice lounge. Both classes run Thursday to Sunday and finish with cocktails and a charcuterie platter. Open since 2019, it has seen over 30,000 visitors.
